Dodo gizzard: Delicious appetiser snack

Dodo gizzard is an appetiser snack, consisting of plantain and chicken. Though it is usually served at parties, nothing stops you from serving the nourishing appetiser snack at home.

Also known as ‘gizdo’, it takes only 45 minutes of your time to prepare this delicious snack. It is mostly served before a main dish. You can serve with a chilled glass of fresh fruit juice.

As mentioned earlier, this dish is made from plantain and gizzard. Plantain is an important nutrient because it helps decrease your chances of suffering from heart diseases, diabetes and certain cancers such as colon cancer. Fibre also helps in preventing constipation by keeping your intestine tract working the way it should. It also contains Vitamin A which is good for the eye, Calcium for the bones, Vitamin C, for the gum etc.

The chicken gizzards are high in protein, potassium and low in fat.

This dish does not only nourish the body, it tastes good and is very appealing to the eye.

INGREDIENTS

•Ripe plantain

•Pack of chicken gizzards and hearts or 4-5 cups of gizzard

•Olive oil

•Garlic

•Ginger

•Red pepper, tomatoes and onions

•Seasoning cubes

•Fresh lemon or lemon juice

•Salt

RECIPE

•Rinse gizzards with cold water in a bowl. Drain water, add lemon juice and wash the gizzards. Drain and rinse gizzards twice with cold water.

•Transfer gizzards to pot. Add seasoning cube, salt, add garlic, few slides of onions and some ginger. Add enough water to cover gizzards, let it boil for 20 minutes on medium heat.

•While that’s boiling, dice the pepper.

•Add olive oil to a pot, heat and add diced pepper, seasoning cube and little salt to taste. Fry for 10 minutes.

•Pour another olive oil in a deep fryer, let it heat. Wash and rinse the plantain, peel and cut the plantain into square-like shapes. Sprinkle little salt over the plantain.

•Pour the plantain in the heated oil, fry till its golden brown or for about five to seven minutes. Transfer fried plantain in paper towel and drain excess oil.

•Return to the boiling gizzard. When soft, remove and deep fry them. Transfer to paper towel to drain oil.

•Put the fried plantain and gizzard in a bowl, add the fried pepper sauce to it and stir.
